Winemaking
100% Zibibbo from Terre Siciliane IGP, grown between Marsala and Salemi in south-west Sicily at around 300 m altitude on loam soils. Hand-harvested at night in late August. After cold maceration at 4°C for 10–12 hours, the grapes are gently pressed and fermented at 15°C for about 14 days. The wine is then aged in stainless steel for 3 months, followed by at least 1 month in bottle.

Taste profile
Pale yellow in colour. Aromas of orange blossom, grapefruit, and a hint of eucalyptus. Light-bodied on the palate with fresh acidity, and notes of lychee, banana, and Mediterranean herbs like oregano and sage, leading to a long, aromatic finish.
