Winemaking
100% Perricone from Terre Siciliane IGP, grown in south-west Sicily near Salemi at 250 m altitude. Hand-harvested at night in mid to late August. Fermented in stainless steel with 15 days of maceration at controlled temperature, followed by malolactic fermentation. The wine is then aged for 6 months in small French oak barrels and finished in steel before bottling, with additional bottle ageing.
Taste profile
Deep ruby red. Aromas of blackberry, liquorice, black tea, cocoa, and toasted hazelnut. Full-bodied and structured on the palate, with lively tannins, fresh acidity, and a long finish of black cherry, spice, coffee, and subtle roasted notes.
