Vino Cotto — A Living Tradition

Vino cotto carries the soul of the Italian countryside — a craft passed down through generations of farming families. Born from must slowly boiled down in great vessels, reduced by nearly a third, it emerges softer, gentler, its natural acidity tamed by fire and time.

The Art of Waiting

This is not a wine for the impatient. Bottled young, it whispers of promise; left to rest, it sings. Some vino cotto ages five years or more before revealing its true voice — deep, complex, and utterly unique. Every year of patience is rewarded with another layer of character.

The winery is a proud custodians of this timeless tradition, crafting each bottle as a tribute to the hands and hillsides that came before us.

Taste profile

In the glass, it glows ochre touched with garnet — the color of memory, of a passito crafted with patience and care. The nose unfolds slowly: dried fig, sweet date, toasted walnut, sun-dried apricot, a whisper of balsamic, delicate tea, spun sugar, and the faintest breath of clove — a bouquet as intricate as it is elegant.

On the palate, it moves with a rich, almost velvety weight, its sweetness gentle and generous. Then, just as it lingers, a subtle bitterness rises to meet it — and a bright thread of freshness cuts through, leaving the wine feeling alive, spirited, unforgettable.

Why you’ll like it

Vino cotto is made for quiet, reflective moments — the end of a long dinner, a fireside evening in colder months, or a toast among people who appreciate tradition and craftsmanship. It pairs beautifully with dried fruit, aged cheeses, dark chocolate, and traditional Italian desserts, making it a natural choice for the holidays or a special celebration. It's also a wonderful gift for someone who loves discovering rare, artisanal wines with a story behind them — a bottle to be savored slowly, not rushed.

Food pairing

Vino cotto's rich sweetness and complex spice make it a natural partner for indulgent, flavorful dishes:

  • Dried & preserved fruits: Figs, dates, apricots, raisins — echoing the wine's own dried-fruit character
  • Aged cheeses: Aged pecorino, Parmigiano-Reggiano, gorgonzola, or a sharp blue cheese
  • Chocolate & confections: Dark chocolate, chocolate-covered nuts, or torrone (Italian nougat)
  • Traditional Italian desserts: Panforte, cantucci (almond biscotti) for dipping, panettone, or a simple crostata
  • Nuts & spice: Walnuts, almonds, or a plate of spiced roasted nuts
  • Cured & aged charcuterie: A well-aged prosciutto or bresaola, where the wine's sweetness balances the salt

Tip: Served slightly chilled or at cool room temperature, it also makes a wonderful companion to a simple espresso or a slice of aged cheese at the end of a meal — a true digestivo experience.
