Winemaking
100% Grillo from Sicilia DOC, grown near Mazara del Vallo in south-west Sicily at sea level on sandy soils. Hand-harvested at night in early August. After soft pressing, fermentation takes place at low temperature (13°C) for about 15 days to preserve freshness and aroma. The wine is then aged in stainless steel for 3 months, followed by at least 1 month in bottle.

Taste profile
Pale yellow in colour. Aromas of yellow melon, ripe pineapple, dill, and rosemary. Light-bodied on the palate with crisp acidity, a subtle flinty edge, and notes of apricot and orange zest.

Oven-baked whole fish, stuffed squid, seafood sauces without tomato, as well as richer savoury meats and medium-aged cheeses.
