Winemaking
An international grape variety originally from France, Sauvignon Blanc has found fertile ground in the ponca (marl and sandstone) soils of Collio, Friuli, where it expresses an elegant minerality, freshness, and its characteristic aromatic profile.
The grapes undergo destemming and cold maceration, followed by soft pressing and static cold decantation of the must. Fermentation takes place over approximately 15 days at a controlled temperature between 16°C and 18°C, with periodic bâtonnage (lees stirring). The wine is then aged in steel tanks for about 6–7 months until bottling.
Taste profile
A bright straw yellow with delicate greenish reflections sets the stage for an elegant, expressive aroma — opening with white flowers, peach, and grapefruit, layered with subtle tropical fruit notes and a hint of fresh tomato leaf. On the palate, it's dry and vibrant, with a beautiful sense of minerality, crisp freshness, and impressive aromatic depth that lingers long after the last sip.
