'U Prematicce Salento IGP, Monsignore

Winemaking
100% Primitivo, harvested in the last week of August. Grapes are destemmed and gently crushed with protection from oxygen. Fermentation takes place at controlled temperature with regular pumpovers and délestage to build structure while keeping balance and fruit expression.

The wine is then aged in stainless steel for 12 months, followed by 6 months in bottle before release.

Taste profile
Deep ruby red with good intensity. Aromas of ripe fruit and cherry jam, layered with dried flowers and light toasted notes. On the palate it is full-bodied, smooth, and well-structured with soft tannins.
